Barbecue Chicken Recipe Ingredients

  • 4 chicken breast singles (no skin or bone, please)
  • 4 cloves garlic, very finely chopped or even minced (depending on how energetic you’re feeling)
  • 2 tablespoons white wine vinegar
  • 1 heaped tablespoon thyme (fresh is best)
  • 1 tablespoon olive oil
  • 2+ teaspoons Dijon mustard
  • 2 teaspoons honey
  • 1 teaspoon red pepper/chili flakes
  • 1 teaspoon of sea salt
  • 1 teaspoon ground black pepper

Barbecue Chicken Recipe Directions

  1. Put chicken breasts – one at a time – inside a plastic bag and secure the top.
    Release some pent-up tension by beating those defenseless breasts until they’re a uniform thickness.
  2. Put chicken breasts into a flat-bottomed dish.
  3. Into a small bowl, combine the garlic, wine vinegar, thyme, mustard, honey, red pepper/chili flakes, sea salt & pepper.
  4. Mix well.
  5. A few drops at a time, add in the olive oil, stirring after each oil addition.
  6. Pour your delicious marinade over the chicken breasts, then cover with plastic wrap and refrigerate for 3 or 4 hours.
  7. Turn the chicken breasts over once or twice during the marinating and refrigeration process.
  8. Preheat barbecue/ grill.
  9. After the chicken breasts have marinated, remove them from the marinating dish, saving the delicious marinade.
  10. Reserve and put them on the barbecue/ grill.
  11. Put the marinade into a small saucepan and bring to the boil, then reduce the heat and allow the marinade to simmer gently for 2 minutes.
  12. Spray barbecue/ grill with a little cooking spray.
  13. Put the chicken breasts on the barbecue/ grill and cover.
  14. Chicken should be allowed to cook for approximately 5 minutes on each side.
    Use the marinade to baste the chicken breasts every couple of minutes during the cooking process.
  15. Serve while hot with a crisp salad or over steamed rice or mashed potato, using the remaining marinade as a sauce.

  • 2 large chickens (skin on), cleaned & cut into quarters
  • 2 cups barbecue sauce
  • ¼ cup of vegetable oil
  • 4 teaspoons thyme (fresh is best)
  • 2 teaspoons dried chili flakes/ crushed red pepper (adjust the amount to taste)
    salt and black pepper, to taste

  1. Brush the chicken pieces with vegetable oil.
  2. In a small bowl, combine the thyme, chili flakes/ crushed red pepper, salt & black pepper.
  3. Heat the barbecue/ grill.
  4. Over medium-high heat, put the chicken pieces – skin side down – on the grill.
  5. Cook for about 10 minutes, turning each piece over periodically.
  6. Reduce heat to medium.
  7. Brush each piece of chicken with a generous amount of barbecue sauce.
  8. Cover grill and continue cooking for a further 10 minutes, remembering to continue basting and turning the chicken pieces periodically.
  9. When the chicken has cooked through, serve immediately.

Barbecue Chicken Peri-Peri Recipe Ingredients

This recipe is loved by everyone and the Peri-Peri flavor is used in restaurants all over the world. It’s easy to make, although you do need to purchase a few spices to be able to do it once you have them you can keep them in your cupboard until next time.   • 1kg (or approx 2 pounds) chicken breasts (skin & bone still intact)
  • 4 cloves garlic
  • 1/3 cup lime juice (fresh is best)
  • 2+ ½ cups cider vinegar
  • 1 teaspoon hot pepper sauce
  • 1 jalapeno chili (fresh is best), de-seeded
  • 1 medium red chili (fresh is best), de-seeded
  • ¾ teaspoon paprika
  • ½ teaspoon Angostura bitters

Barbecue Chicken Peri-Peri Recipe Directions

  1. Using a mortar & pestle (or an electric grinder), make a paste out of the garlic, jalapeno & red chili.
  2. In the bottom of a shallow casserole/ baking dish, mix the lime juice with the Angostura bitters, hot pepper sauce, vinegar, and paprika.
  3. Mix the garlic & chili mixture into the lime juice mixture in the bottom of the casserole/ baking dish.
  4. Roll the chicken breasts in the casserole/ baking dish, ensuring each piece is well covered in the marinade.
  5. Cover with lid or plastic wrap and refrigerate overnight, allowing the chicken breast pieces to marinate.
  6. Take the chicken out of the marinade and place on a medium-hot barbeque/ grill for approximately 15-20 minutes, or until the chicken is cooked through.
  7. During the cooking process, baste the chicken breasts every few minutes with the leftover marinade, and turn each piece of chicken frequently.
  8. Serve immediately while the chicken breasts are still piping hot.
  9. Traditionally, chicken peri-peri is served with chilled orange segments to suck on between mouthfuls to soothe and refresh, and with either steamed rice or couscous.
